Back in 2010 when we started our business we met Anja and Jan Baak, the creators of Great Glen Charcuterie. Based in Roy Bridge, they make a unique range of delicious charcuterie using wild venison from the Highlands. Featured on the menus of some of the UK’s best restaurants, all their products are produced by hand and air dried to preserve the unique flavour of the venison. We have selected the venison chorizo, as its rich smoky flavour makes a fantastic accompaniment to our hand dived scallops. We also have their award-winning green pepper venison salami, which has won Great Taste and Charcuterie awards, and the venison bresaola. This is made from the best cuts of wild venison and dry cured, oak smoked and matured for up to eight months. Low in calories and rich in nutrients, it is delicious with a simple rocket salad and parmesan cheese.
